A Beginner's Guide to South Indian Filter Coffee

South Indian filter coffee is less a recipe than a ritual, but the mechanics are simple once you understand them.
Start with a fine, even grind — our South Indian Filter grind is milled specifically for this. Pack the upper chamber of your filter firmly but not tight enough to stop water flow entirely. Add hot (not boiling) water and let it drip slowly; a good filter takes 15-20 minutes to fully extract. Rushing this step is the most common mistake — the slower the drip, the stronger and less bitter the decoction.
Once you have your decoction, the ratio is up to taste, but a common starting point is one part decoction to two parts hot milk, with jaggery or sugar to taste. Pour between the davara and tumbler a few times to froth it before serving.
