The rule is simple: an airtight container, kept away from direct light, heat, and moisture. All three degrade the aromatic oils that make specialty coffee worth drinking in the first place, and they work faster than most people expect.
Skip the fridge or freezer for coffee you'll use within a few weeks — it's the most common freshness mistake. Cold storage introduces condensation every time you open the container, and that moisture dulls flavor fast. It only makes sense for a long-term stash you won't touch for months, sealed properly to begin with.
The better habit is buying only what you'll finish in 2-4 weeks, rather than stockpiling a large bag to save a trip. Freshness fades gradually, not overnight, but buying smaller and more often beats storage tricks every time.
One more lever: whole bean stays fresh longer than pre-ground, since grinding exposes far more surface area to air. If freshness matters to you, grind just before brewing rather than in advance.
